Cookies


I'm sharing this cookie recipe for all to enjoy. 


COOKIES
(Recipe may be halved as this makes heaps)

2 (500 ml) cups butter
680 g chocolate chips
4 (1000 ml) cups flour
2 (500 ml) cups brown sugar
2 tsp. (10 ml) Bicarbonate of soda
1 tsp. (5 ml) salt
2 (500 ml) cups sugar
500 g Grated Cadbury chocolate
5 (1250 ml) cups blended oatmeal
4 eggs
2 tsp. (10 ml) baking powder
2 tsp. (10 ml) vanilla
3 cups (375 ml) chopped nuts (optional)

Measure oatmeal, and blend in a blender to a fine powder.
Cream the butter and both sugars. Add eggs and vanilla, mix together with flour, oatmeal, salt, baking powder, and bicarbonate of soda. Add chocolate chips, grated Chocolate and nuts. Roll Into balls, and place two inches apart on a cookie sheet. Bake for 10 minutes at 180 C.

The above quantities make 112 cookies. Enjoy!

Something Vanila

When making the hot sauce for Malva Pudding add a half of teaspoon of organic vanilla in, it is truly delicious.
For those who don;t have a Malva Pudding recipe, I have added one.


Malva Pudding Recipe
Serves 6-8
1 heaped tablespoon butter
3 heaped tablespoons apricot jam
1 egg
1 cup flour
1 teaspoon bicarbonate of soda
½ cup sugar
½ cup milk
Cream together the butter and sugar. Add the beaten egg and jam and beat together. Add the dry ingredients and milk alternately and stir into the mixture. Pour the batter into a greased round dish approx 21cm / 8 inches.
Bake at 180C / 375F for 35 minutes until the top is browned and a skewer comes out clean. Serve warm with custard and cream.

Sauce
1 cup cream
100g butter
½ cup sugar
60 ml hot water
½ teaspoon organic vanilla (optional)

Warm together the ingredients until the butter has melted and the sugar dissolved and pour over the pudding as it comes out of the oven. You can prick holes in the top to help the sauce soak in. 

With the sauce incorporated into the Malva pudding you serve it with custard and a dollop of vanilla ice-cream, we as South Africans love our sweet things.

Weekend

I received vanilla pods from a friend that brought it from Mauritius, oh how the smell filled my house and kitchen. Tonight I'm making something sweet and something new, will post recipes over the weekend. 
Our blog is still new hasn't been view that many times, I will however continue posting articles.  I laughed when I looked at my friend's blog 700 000 views, and he just started a month ago!  Well I have two members, thank you Chandre and Michael; I will send you the recipe book at no cost.

Rain

It is raining in my beautiful city, Port Elizabeth and today is the perfect time to make fresh homemade pasta with a true Italian Bolognaise sauce as I was taught by my dear Italian friend, Francesca.
The other thing I was pushed to do by my friends is to start my own cookbook which will be sold online, this project will be my love project and I will keep you constantly updated.
Things to come in the next few weeks will be new kitchen gadgets and naturally good food.

Chicken & Prawn Curry


200g baby marrow, sliced
80g bamboo shoots
50g spring onions, sliced
125ml curry leaves, dried
650g chicken breast fillet, skinned and cubed
32 medium prawns, cleaned and peeled
750ml coconut

Seasonings
50ml vegetable oil
100g onion, finely diced

10g ginger, grated
10g garlic, crushed
10ml chillies, dried and crushed
10ml cardamom seeds
2cm cinnamon stick
2 star anise

Curry Paste
90ml masala powder
30g tomato paste
30ml lemon juice
10ml lemon zest

Garnish
100ml fresh coriander leaves

The day before
Wash and cut all the vegetables, curry leaves, chicken and prawns and store in the refrigerator in separate sealed containers.

On the day
Heat oil on high heat fry all seasonings until just starting to brown. Add to curry paste ingredients in the order as above while stirring well.
Add chicken pieces and continue stirring until just starting to firm. Add the coconut milk and stir in. Add vegetables and prawns and bring to boil. Adjust seasoning and reduce to simmer for about 8 – 10 minutes.
Dish basmati rice on plates and add chicken curry. Garnish with coriander leaves.
